This is probably one of the quickest fish dishes you’ll ever make–smokey heat from chipotle hot sauce melds with creamy mayonnaise giving tilapia a bubbling topping that will satisfy everyone around the table.

Chipotle Mayonnaise Tilapia:

Ingredients:

6 Tbsp mayonnaise
3 Tbsp finely chopped scallion greens
1 Tbsp chipotle Tabasco
1 1/2 lbs tilapia fillet (about 6)
4 lemon wedges

Directions:

Preheat broiler. Line rack of a broiler pan with foil, then lightly oil.
Whisk together mayonnaise, scallion greens, and Tabasco. Pat fish dry, then put on foil and lightly season with salt. Spread fish evenly with topping and broil about 8 inches from heat until topping is bubbling and golden and fish is just cooked through, 6 to 8 minutes. Serve with lemon wedges.
