baked macaroni and cheese

Macaroni and cheese has to be one of the top comfort foods if not the top comfort food there is. But it is traditionally made with fattening ingredients that add calories and pounds to your waistline. But this recipe will have you eating more this great dish without the added weight. 12 oz fusilli or elbow pasta

1 tbsp butter

1 tbsp olive oil

1/4 cup minced onion

1/4 cup flour

2 cups 2% milk

1 cup vegetable broth

2 cups shredded cheddar

2 tbsp Parmesan cheese or Parmesan-type grated topping (note: nutritional yeast also works)

1/4 cup seasoned bread crumbs

cooking spray

salt and pepper to taste
