INGREDIENTS

½ cup pineapple juice
⅓ cup dark rum
¼ cup reduced-sodium soy sauce
¼ cup chopped scallions
1 jalapeño pepper, seeded and chopped (optional)
2 Tbsp molasses
2 Tbsp lime juice
1 Tbsp Worcestershire sauce
2 tsp minced garlic
2 tsp minced fresh ginger
2 tsp curry powder
½ tsp ground coriander
½ tsp cayenne pepper
¼ tsp ground cinnamon
¼ tsp ground allspice
2 lb boneless, skinless chicken thighs, trimmed and cut into 1 1/2-inch pieces
