Orange-Scented Beef Stew:
1 large red onion, halved and thinly sliced
1 large carrot, sliced 1/2-inch thick
4 cloves garlic, peeled and crushed
4 strips orange zest
3/4 cup orange juice
1/4 cup orange marmalade
1 teaspoon sweet paprika
1 teaspoon salt
1/2 teaspoon pepper
1/2 teaspoon dried thyme
3 pounds beef chuck cut into 3-inch chunks
In a 4 to 7 quart slow cooker combine onion, carrot, garlic, orange zest, orange juice, marmalade, paprika, salt, pepper, and thyme. Add beef, turning to coat.
Cook on low for 6 hours or until beef is very tender. With a slotted spoon, spoon beef and vegetables onto a platter. Place flour in a small saucepan and whisk in pan juices. Cook over low until lightly thickened, about 3 minutes. spoon sauce over beef.
